Arsenic is linked to many types of cancer, including skin, lung, bladder, liver, and kidney cancers. Evidence suggests that lung cancer is the most common cause of arsenic-related mortality.
The International Agency for Research on Cancer has classified arsenic as a category 1 carcinogen, meaning it is known to cause cancer in humans. The US EPA has also determined that inorganic arsenic is carcinogenic to humans.
Choosing Safe Rice
I recently wrote about a Dartmouth study that found high levels of inorganic arsenic in organic brown rice syrup (“OBRS”). The team focused their study on young children. formulas, energy performance products and cereal bars. The problem is the current way of growing rice in soils that contain artificial and carcinogenic arsenic. Now what?

The two types of arsenic
Arsenic occurs in two forms: organic and inorganic.
Organic arsenic is found primarily in fish and shellfish. Given the low toxicity of this type of arsenic, the presence of arsenic in shellfish is not a cause for great concern.
Inorganic arsenic, which is the most toxic form, is produced when arsenic combines with an element other than carbon, such as oxygen, one of the two elements that make up water. Inorganic arsenic is commonly found in groundwater, soil, and industrial chemicals.
Rice contains inorganic arsenic.
“The arsenic in rice is primarily a function of the natural arsenic in the soil,” says Dr. Spaeth. Industrial pollution may be less to blame, although some of the arsenic in the soil is the result of older arsenic pesticides.
While arsenic can be found in trace amounts in many types of foods, it has been found at higher levels in rice.

Organic rice is a certified food without genetic alteration, growth promoter, pesticide and bleach in the United States and Europe. As a result, this type of rice is exclusively available through a few rice suppliers.
